Olive Oil Molten Brownies

Olive Oil Molten Brownies

Olive Oil Molten Brownies

We continue our love affair with all things cacao with these fudgy, gooey, sweet and slightly savoury treats.

Our love affair with cacao started with one of our co-founders, Jerry, trying to find an alternative to his morning coffee. Enter Cacao Collective and a new morning routine that was not only delicious, full of antioxidants and serves as a functional substitute for caffeine but also enhances cognitive function, strengthens awareness, focus and creativity. Pretty amazing. In this recipe you can choose to use ceremonial grade cacao or raw cacao powder.

Use any chocolate you prefer - bar, pieces, dark, nutty or crunchy. We used Tony Chocolonely’s Milk Chocolate Hazelnut to add some crunch and support this incredible company on a mission to eliminate slavery in chocolate production.

Time: 20 minutes

Yields: 9-12 pieces

Ingredients

  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup extra virgin olive oil
  • 1.5 cups brown sugar
  • ¾ cup self-raising flour
  • ¾ cup cacao powder, sifted
  • 100g chocolate, roughly chopped
  • 1 tsp sea salt flakes (plus extra for sprinkling)

Method

  1. Preheat oven to 180°C, grease a 22cm square cake tin.
  2. In a bowl combine eggs, vanilla extract, extra virgin olive oil together with sugar. Whisk together until well combined.
  3. Add flour, cacao and salt. Mix until a smooth, thick batter is formed. Fold in the chocolate pieces.
  4. Pour the batter into the prepared cake tin and bake for 10-15 minutes. The centre should be fudgy and oozy but not liquid. At about the 10 minute mark remove the pan from the oven and poke the centre with your finger or a toothpick. It should feel soft but set. Bake for another 5 minutes if it is not desired consistency. Be careful not to overbake!
  5. Remove from pan, sprinkle some flaky sea salt over the top and cool on a wire cooling rack. Once slightly cooled, cut into pieces.

Notes

Use any type of chocolate you fancy and add some nuts for an extra crunch.

Serve warm for gooey brownies or chill in the refrigerator for fudgy consistency. Brownies will keep in the refrigerator for up to 7 days.
