Crispy Spring Onion and Chilli Labneh

This has become one of our favourite recipes. Impossibly easy to throw together and seriously delicious as a light lunch or snack. It’s impressive enough to serve as a pre-meal snack to your most discerning guests but also casual enough for a last minute get together with friends. Grab some pre-made labneh from the shops or use greek yoghourt. If you are feeling adventurous try your hand at making your own labneh.

We used our new must ‘put me on everything’ UmamiPapi Chilli Oil, made locally and by hand in Melbourne with only the freshest Australian ingredients. This recipe also works well with crushed red pepper flakes. Choose your own adventure with how much heat you add. Any quality extra virgin olive oil will work but we are partial to using Mount Zero or EveryBitOrganic as they champion organic farming methods from farms right here in Australia.

Time: 15 minutes

Yields: 2 cups

Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 cups (500g) labneh
  • 2 tbsp lemon juice
  • 1 tbsp chilli oil
  • 2 tbsp coriander and/or chives (finely chopped)
  • 3 spring onions (white and light green parts thinly sliced)
  • Salt and fresh ground black pepper to taste
  • Crusty bread, crackers or raw veggies for dipping

Method

  1. Pour olive oil into a sauce pan and add red pepper flakes or chilli oil. Simmer until the oil begins to turn a fiery bright orange.
  2. Add spring onions, gently stirring until they begin to sizzle (just a couple of minutes, careful not to let them burn).
  3. Remove from heat and add coriander and/or chives to the oil mixture. Cool and season with salt and pepper to taste.
  4. Combine lemon juice with lebnah and season with salt and pepper.
  5. Arrange lebneh in a bowl and drizzle, scoop and swirl oil mixture over. Garnish with additional herbs and flaky salt, if you wish.
  6. Serve with crusty bread, crackers or raw veggies.

Notes

Make ahead or save for later! Seasoned lebneh and olive oil mixture can each keep in an airtight container in the refrigerator (seperatly) for up to a week. Bring olive oil mixture to room temperature prior to using.

Lebneh (also spelled lebne) is a healthy and versatile strained yogurt that has been a staple of Middle Eastern households for centuries. High in protein, calcium and a great source of probiotics, lebneh is tangy, refreshing and versatile snack or meal for anytime of the day.
